Course Description
BRCGS have for some time developed and delivered auditor competency requirements and assessment criteria for each of the product categories. Core technical knowledge sets are required for most categories and product specific knowledge.
The BRCGS Category 1 Learning Module provides delegates with the understanding of what the impacts on food safety and quality are likely to be, allowing the appropriate discussions with factory staff to be undertaken. We cover areas outside the Standard, such as an overview of animal farming practices as many food safety and quality issues originate at the farm level requiring management within the supply chain.
The aims of the course are to provide delegates with the relevant information covering the:
- - animal Management
- - practices
- - transportation and receiving
- - animal slaughter
- - carcass inspection and grading
- - primary processing
- - packaging and storage
- - quality issues and traceability
