Jessie Vipham is an Assistant Professor in Global Food Systems at Kansas State University. Jessie’s graduate training is in food microbiology and food safety. Her research focuses on applied meat safety—including pre- and post-harvest interventions, pathogen monitoring and control, and baseline research—and food security. She is involved in food safety and food security research and education Central America, Africa and Southeast Asia; which includes constructing pathogen baselines for local markets and federally inspected/municipal food production facilities, developing sustainable livestock production systems (farm to table), and conducting “train the trainer” education courses (basic food hygiene, HACCP, GAP, GMPs).
